Instructions
Step 1: Prep the Ingredients
- Dice the potatoes, bell peppers, and onions into small, even pieces.
- If using meat, cook the sausage, bacon, or ham according to package instructions and set aside.
- Crack the eggs into a bowl, add the milk, and whisk until well combined. Season with salt, pepper, and paprika.
Step 2: Cook the Potatoes
- Heat 1 tablespoon of olive oil or butter in a large skillet over medium heat.
- Add the diced potatoes and cook for 8-10 minutes, stirring occasionally, until golden and tender.
- Add the diced onions and bell peppers, cooking for an additional 3-4 minutes until softened.
Step 3: Scramble the Eggs
- Push the potato mixture to one side of the skillet.
- Pour the egg mixture into the empty side of the skillet.
- Gently scramble the eggs, stirring occasionally, until fully cooked.
- Combine the eggs with the potato mixture and stir in the cooked meat (if using).
Step 4: Assemble the Burritos
- Warm the tortillas in the microwave for 10-15 seconds or on a skillet for 30 seconds to make them pliable.
- Place a generous scoop of the filling in the center of each tortilla.

- Fold the sides of the tortilla inward, then roll it up tightly from the bottom to create a burrito.

- Serve the breakfast burritos immediately with salsa, sour cream, and fresh cilantro or green onions on the side.
- For a crispy exterior, heat a skillet over medium heat and lightly toast the burrito for 1-2 minutes on each side.
