Ingredients
For the Wraps:
- 1 ½ lbs boneless, skinless chicken breasts, grilled and diced
- 2/3 head of romaine lettuce, chopped
- 2 small avocados, peeled and diced
- 1 cup grape tomatoes, halved
- 1/3 cup finely shredded Parmesan cheese
- 4 burrito-sized whole wheat or white tortillas
For the Caesar Dressing:
- 2/3 cup plain fat-free Greek yogurt
- 1/4 cup light mayonnaise
- 1 tbsp olive oil
- 3 anchovy fillets, mashed into a paste (or 1 1/2 tsp anchovy paste)
- 1 1/2 tbsp fresh lemon juice
- 2 tsp Worcestershire sauce
- 1 1/2 tsp Dijon mustard
- 2 small garlic cloves, pressed
- 2 tbsp water (adjust as needed for consistency)
- Salt and freshly ground black pepper to taste
Instructions
1. Prepare the Caesar Dressing:
- In a bowl, whisk together Greek yogurt, mayonnaise, olive oil, mashed anchovies, lemon juice, Worcestershire sauce, Dijon mustard, garlic, and water.
- Adjust consistency with additional water as needed, and season with salt and pepper to taste.
