For the Wraps:

  • 1 ½ lbs boneless, skinless chicken breasts, grilled and diced
  • 2/3 head of romaine lettuce, chopped
  • 2 small avocados, peeled and diced
  • 1 cup grape tomatoes, halved
  • 1/3 cup finely shredded Parmesan cheese
  • 4 burrito-sized whole wheat or white tortillas

For the Caesar Dressing:

  • 2/3 cup plain fat-free Greek yogurt
  • 1/4 cup light mayonnaise
  • 1 tbsp olive oil
  • 3 anchovy fillets, mashed into a paste (or 1 1/2 tsp anchovy paste)
  • 1 1/2 tbsp fresh lemon juice
  • 2 tsp Worcestershire sauce
  • 1 1/2 tsp Dijon mustard
  • 2 small garlic cloves, pressed
  • 2 tbsp water (adjust as needed for consistency)
  • Salt and freshly ground black pepper to taste

Instructions

1. Prepare the Caesar Dressing:

  • In a bowl, whisk together Greek yogurt, mayonnaise, olive oil, mashed anchovies, lemon juice, Worcestershire sauce, Dijon mustard, garlic, and water.
  • Adjust consistency with additional water as needed, and season with salt and pepper to taste.

2. Assemble the Wraps:

  • Lay each tortilla flat and layer with romaine lettuce, diced grilled chicken, avocado, grape tomatoes, and Parmesan cheese.
  • Drizzle the prepared Caesar dressing generously over the fillings.

3. Wrap and Serve:

  • Fold the tortillas tightly around the ingredients.
  • Serve immediately or store for later enjoyment.
