Crispy Chicken:
- 2 thin boneless, skinless chicken breasts (about ¼ inch thick)
- Kosher salt and pepper, to taste
- Seasonings of choice (smoked paprika or cayenne recommended)
- ½ cup all-purpose flour
- 2 eggs
- ¾ cup panko breadcrumbs
- ½ cup grated Parmesan cheese
- Canola oil, for frying
Caesar Salad:
- 2 large garlic cloves, smashed
- 6 anchovy fillets
- Juice of 2 lemons
- 2 tsp Dijon mustard
- A few dashes of Worcestershire sauce
- 2 egg yolks
- 2 tsp chopped Calabrian chilis (or to taste)
- ½ tsp smoked paprika
- ⅔ cup canola oil
- ⅔ cup grated Parmesan cheese (plus extra for shaving into the wrap)
- Kosher salt and pepper, to taste
- 2 romaine hearts, chopped and crisped in ice water
- Small croutons (optional)
Wrap:
- 2 large (12-inch) flour tortillas
Instructions
- Prepare the Chicken:
- Season both sides of the chicken with salt, pepper, and additional seasonings as desired.
- Place the flour in a shallow bowl, whisk eggs in another, and mix panko and Parmesan in a third.
- Dredge each chicken breast in flour, then egg, then breadcrumb mixture, ensuring an even coating.
- Chill the breaded chicken in the fridge while making the dressing.
- Make the Caesar Dressing:
- Blend garlic, anchovies, lemon juice, Dijon mustard, Worcestershire sauce, egg yolks, Calabrian chilis, smoked paprika, and oil until smooth.
- Stir in Parmesan and season to taste. Set aside extra dressing for dipping.
- Cook the Chicken:
- Heat a shallow layer of oil in a skillet over medium heat. Fry the chicken until golden and crispy (3–5 minutes per side).
- Drain on paper towels or a wire rack.
- Assemble the Wraps:
- Toss the romaine with croutons, shaved Parmesan, and the Caesar dressing in a large bowl. Add extra dressing if desired.
- Warm the tortillas until pliable. Chop the chicken into bite-sized pieces and toss with the salad.
- Divide the salad mixture evenly between the tortillas. Wrap tightly, cut in half, and serve.
