Ingredients

For the Sandwich:

  • 8 slices of whole grain or sourdough bread

  • 1 pound of sliced roasted turkey breast (leftover or deli-style)

  • 4 slices of pepper jack cheese

  • 1 cup of arugula or spinach

  • 1 medium tomato, thinly sliced

  • 1/2 red onion, thinly sliced

  • 1 tablespoon of olive oil

For the Sweet and Spicy Sauce:

  • 1/4 cup of mayonnaise

  • 2 tablespoons of sweet chili sauce

  • 1 tablespoon of Dijon mustard

  • 1 teaspoon of sriracha or hot sauce (adjust to taste)

  • 1 teaspoon of honey

  • Salt and pepper to taste

Instructions

1. Prepare the Sweet and Spicy Sauce

In a small bowl, combine mayonnaise, sweet chili sauce, Dijon mustard, sriracha, and honey. Mix well until smooth. Season with salt and pepper to taste. Set aside.

2. Toast the Bread

Drizzle olive oil on a skillet over medium heat. Lightly toast the bread slices until golden brown on both sides. Remove and let them cool slightly.

3. Assemble the Sandwich

  • Spread a generous amount of the sweet and spicy sauce on one side of each bread slice.

  • Layer the bottom slice with arugula or spinach, followed by turkey slices, pepper jack cheese, tomato slices, and red onion.

  • Top with the other slice of bread, sauce side down.

4. Serve

Cut the sandwich diagonally and serve immediately with your choice of side, such as sweet potato fries or a fresh salad.
