Wet Ingredients:

  • 1¼ cups milk
  • 1 egg
  • 3 tablespoons unsalted butter, melted
  • Additional butter for cooking and serving
  • Maple syrup, warmed, for serving

Instructions

Step 1: Prepare the Batter

  1. In a large mixing bowl, sift together the flour, baking powder, sugar, and salt.
  2. Create a well in the center of the dry ingredients. Pour in the milk, add the egg, and drizzle in the melted butter.
  3. Stir until the mixture is smooth and free of lumps. Avoid over mixing to keep the pancakes light and fluffy.

Step 2: Heat the Griddle

  1. Place a griddle or large frying pan over medium-high heat.
  2. Lightly grease with a small amount of butter or oil.

Step 3: Cook the Pancakes

  1. Pour approximately ¼ cup of batter onto the griddle for each pancake.
  2. Cook until bubbles form on the surface and the edges appear set, about 2-3 minutes.
  3. Flip the pancake and cook the other side until golden brown, an additional 2 minutes.
  4. Repeat with the remaining batter, adding more butter or oil to the griddle as needed.

Step 4: Serve

  1. Stack the pancakes on a plate, placing a pat of butter between each layer if desired.
  2. Drizzle generously with warm maple syrup and serve immediately.
